Today at university I decided to spend my break at home, quickly eat something and then return for my next class. I’m a very diligent student and strongly believe in going to all my courses in order to keep up. I quickly went into the organic supermarket around the corner of my house, not knowing what I would buy for lunch. It should be quick and easy and go well with the few ingredients I already have at home.

My eye caught fennel, a vegetable I haven’t prepared in a long long time. Fennel tea is one of the worst things I’ve ever had to taste (right after thyme tea, yuk) and I’ve kept my distance ever since. But somehow I felt the strong urge to buy it. Then it all assembled in my head. I still had a lot of kale at home, as well as red quinoa, apples and a pomegranate. Ingredients that in the beginning didn’t seem to fit at all just gave me the outline for a perfect lunch.

I bought the fennel as well as lemons and rushed home, already looking forward to my energising and delicious lunch. It kind of composed itself, the quinoa cooked on the stove, in the meantime I caramelized the fennel, cut the apple and kale and whipped up a lemon dressing. When I combined everything in a big bowl it hit me just how beautiful it looked. Now there’s a dilemma – university or blogging? For some people this must be a no-brainer but I was really confused for a moment. Well, as you can probably guess the blogger in me won and I certainly don’t regret it at all. This is the most authentic and best way to develop and share recipes in my opinion.  It’s when you can already taste the flavours in your mind and the ingredients kind of hop into your lap, that’s when great things are happening.

Serves: 2 servings

For the salad:

60 gram red quinoa
1/2 teaspoon sea salt

200 gram fennel, cored and thinly sliced
1 tablespoon olive oil

1/2 teaspoon sea salt
1 pinch of pepper
1/2 teaspoon raw sugar

100 gram kale, stems removed and leaves torn into small pieces
1 small apple, thinly sliced

50 gram pomegranate seeds
30 gram walnuts

For the dressing:

4 tablespoon lemon juice
3 tablespoon olive oil
2 tablespoon maple syrup
1 teaspoon dijon mustard
1/2 teaspoon sea salt
1 pinch of pepper

1. Cook the quinoa in salted water as instructed on the packaging.

2. Sautée fennel with olive oil in a skillet while stirring for five minutes. Season with salt and pepper, then add the sugar. Caramelise for three more minutes, then set aside.

3. Prepare the dressing by combining all ingredients.

4. In a big bowl assemble all ingredients and add the dressing.
