Oven Roasted Veggies with Spinach Pesto Dip (and Vegan Gourmet Food Shop Holzinger)

Roasted Veggies

On Monday Christian and I were invited to the opening of Holzinger, the first and new vegan and organic gourmet food shop in Munich. As someone on a (slightly extended) student budget I was a bit skeptical about the affordability of the products. We already have numerous vegan or organic shops in Munich, many of which are already too expensive for my taste.

But – as you probably already have guessed, because I wouldn’t write about it if I didn’t like it – this wasn’t the case. At Holzinger the gourmet clearly refers to the food and not just the prize (which is mostly appropriate in my opinion). The shop is beautifully arranged, with fresh fruit and vegetables stacked next to the entrance and, my personal highlight, the horizontal herb garden and little fountain (see pictures below). How cool is that?

Many products there can be found in any other organic shop, but the range is quite large and there never is a doubt about wether it’s plant-based or organic, which to me is crucial to a relaxed shopping experience. What definitely sets Anette Holzinger’s concept apart, is the choice of fresh and beautiful pies, cakes, tarts and pastry, as well as bread, antipasti and quiches. Those cakes looked unbelievably good! If I hadn’t any other reason to return, I would definitely go there for a sweet treat.

Apparently the concept involves much more than just food shopping and there will soon be show cooking and cooking classes. I’m really excited for those and hope I’m able to attend one of those classes, since it’s always great to broaden your horizon, find fresh inspiration and get to know new people. I love how the vegan scene in Munich keeps growing and growing!

Sadly we didn’t have much time to fully experience the whole event, but on the way out we grabbed our free goodie bag which contained the ingredients for the Oven Roasted Autumn Veggies and a recipe instruction. Well, of course Anette had me at that moment, food really is the best present to make me happy!

The next day I prepared the roasted veggies as my lunch and dipped it in some quickly wrapped up baby spinach pesto. Unbelievably good! Good and fresh products don’t need fancy recipes. The dish is filling and flavourful, and also kind of prepares itself. Just put the vegetables in the oven and prepare the Spinach Pesto Dip in between. Quick, easy and delicious – it doesn’t get much better!

800 gram hokkaido pumpkin
600 gram sweet potato
250 gram red bell pepper
1 large red onion
3 tablespoon olive oil
1 teaspoon rosemary, minced
1/2 teaspoon sea salt
1 pinch of pepper

1. Preheat oven to 200°C

2. Wash pumpkin, then split it into half and remove seeds with a spoon and dice it. Wash, peel and dice the sweet potato. Wash and dice the bell pepper (I had a pointed one, so I cut it into rings). Peel and dice the red onion.

3. In a medium sized bowl combine olive oil, rosemary, sea salt and pepper. Add the vegetables and mix until they are coated with the oil mixture.

4. Spread evenly on a baking tray and roast for about 30 minutes or until slightly browned.

Cook time
Total time
10 mins

100 gram baby spinach
3 tablespoon sunflower seeds
1 clove of garlic
5 tablespoon olive oil
2 tablespoon lemon juice
1 tablespoon nutritional yeast (optional)
1/2 teaspoon sea salt
1 pinch of pepper

Combine everything in a blender and mix until smooth.

Note: This is a very quick version. If you want to enhance the flavours and elevate it, I recommend you to roast the garlic and sunflower seeds, or even to exchange the sunflower seeds with pin nuts or walnuts.
