I have been debating for quite some time now if I should really post something as simple as a Smoothie, but finally gave in. And really, why not? Smoothies are an integral part of my diet, especially when I have classes during the semester. It takes literary only minutes to prepare them, they are healthy, full of fibre and the best to consume on the go. I love taking them to classes with me, since I don’t feel weird drinking my smoothie during the lecture, I would feel very weird eating a sandwich, though. A loud grumbling stomach is another thing I feel very conscious about, so Smoothie it is.
Instead of presenting you with an elaborate Smoothie creation I give you my fool-proof everyday recipe, done in five minutes, nourishing and satisfying. The different components can be substituted with equal ingredients at any time, for example strawberries with some other kind of fruit, almond milk with other plantbased milk or peanutbutter with any other nutbutter. I keep my freezer stocked with ripe bananas (peeled and chopped) and other fruit, like mango, strawberries, cherries, and so on. To keep my belly full I rely on oats and chia seeds in my Smoothie. Eating healthier food has never been easier (and more delicious)!
Strawberry Smoothie
2 ripe bananas, frozen
100 gram strawberries, frozen or fresh
300 milliliter almond milk
3 tablespoon oats
1,5 tablespoon chia seeds
1 tablespoon peanutbutter
1 medjool date (or more if you have a sweet tooth)
Add everything to your blender and mix until smooth.
Enjoy right away or store it in the fridge if possible. If you used frozen fruit, it will stay cold for quite some time anyways.
I think it is important to share the super simple, especially for the transitioning vegan who doesn’t cook often. My husband still follows recipes for smoothies, and it seems silly but you need a place to start. This recipe looks super yummy!
