Some people have more good friends than fingers and toes (that makes twenty, if you have problems counting). I’m more of a ‘just a few good friends’ person. I’m probably a misanthropist, but if you wiggled yourself into my heart somehow, I pretty much expect you to always stay there and take me as I am. Nobody forced you in after all!
So one of those good friends is my girl Tine. How we met is kind of a secret (it might have been an online forum board about Twilight). We met, we talked young adult books and then she moved in with me into my first own apartment. She didn’t stay a very long time, but I remember coming home in the mornings after being out all night and crushing in her bed, watching disney movies all day. Oh and there was lots and lots of mac and cheese involved, too.
We always loved to have rituals. For example, there used to be a time when we regularly went on Sunday Starbucks dates. We would go there, drink sugary Caramel Lattes and read our YA books. Good thing Tine used to be a book seller, there were lots and lots of books to be read.
For the last couple of years we started a new ritual. About once a month we meet up, have Indian food in the colder month, or ice cream in summer, and go watch a movie. It’s always nice and cosy and many lovely things happened. Like for example leaving the cinema and finding the first unexpected snow has fallen – such a magical moment!
Sometimes we stay home, though, and have a girls night. We watch nice movies (preferably frozen), I cook us some food, we have some wine, and if the wine kicks in we like to sing along to disney songs (let it goooo). We had said girls night last week and I made us some creamy pasta and as dessert I prepared this lovely Berry Delight Parfait.
Tine is a huge lover of berries. The first berries of the year were in stores, so it was a done deal. I had this a couple of days before as some kind of breakfast and just new Tine would love it. It takes just a few minutes to assemble, it’s fresh, it’s delicious and kind of the perfect welcome to spring! Instead of yogurt I used a product that is new on the vegan market called quark. It’s pretty much like yogurt, but firmer. If you don’t have that just take yogurt instead.
Have it for breakfast, have it as a snack or as dessert! It’s a total ‘treat yo self’ dish and that what makes it so special! Treat yourself and your loved ones!
200 gram strawberries, divided
150 gram blueberries, divided
400 gram vegan quark or yogurt
6 tablespoon puffed quinoa
2 tablespoon date caramel
dark chocolate (optional)
1. Wash the berries and divide them into two portions (for the bottom and topping).
2. Fill one part of the blueberries in the bottom of the two jars. Chop half of the strawberries and add to the jar.
3. Top with each 200 gram of the quark or yogurt, then the each 3 tablespoon puffed quinoa.
4. Last but not least half the rest of the strawberries, place them and the blueberries on top, finish with each a tablespoon date caramel and if desired, add a few pieces of dark chocolate.
5. Enjoy right away or keep in the fridge.
